A manutenção de condições higiênicas adequadas no ambiente de produção de alimentos é de suma importância para assegurar a obtenção de alimentos seguros. Devido à suscetibilidade das unidades frigoríficas à contaminação por micro-organismos, o controle de qualidade nesses locais assume um papel crucial. O propósito deste estudo é elucidar a relevância do controle de qualidade na produção de uma unidade frigorífica, visando garantir a segurança alimentar, a uniformidade dos produtos e processos, bem como a satisfação do cliente. Esta pesquisa busca destacar a função do controle de qualidade em todos os segmentos da indústria, abrangendo a supervisão dos processos, a gestão dos produtos e a vigilância das Boas Práticas de Fabricação (BPF). Por meio da implementação de ferramentas da engenharia de produção, tais como Procedimentos Operacionais Padrão (POP) e planos de ação, o controle de qualidade desempenha um papel fundamental na garantia da excelência frigorífica, embora seu maior desafio resida na adesão e assimilação desses conceitos pelos colaboradores.
